Job description

PURPOSE OF THE POSITION

To manage the kitchen operations of the Catering Services department on the Mahikeng Campus within the Student Centre Cafeteria and Coffee Shop and aid the Head Chef.

KEY RESPONSIBILITIES:

1.   Quality control and quality catering

·        Responsible for performing quality control and control that involves: Supervising the issuance of supplies and preparing them for serving.  Supervision of the provision of food to customers. Supervise portion control and quality of food.

·        Quality control over hygienic conditions and appearance of personnel.  Supervision of the general conditions and operation of appliances and refrigerators, meal checks of students, guests, and all staff as well as meal reservations, ensuring that the food is always presented tastefully and under hygienic conditions.  Ensure that the cafeteria spaces are clean.

·        Ensure that all activities run smoothly.  Control with respect to general rules and regulations in the operating situation

·        Ensuring that a continuous consistent standard product is presented.

2.   Administration

·        Responsible for handling all daily orders in terms of daily and weekly needs in conjunction with the Head Chef and the Administrative Assistant.  Plan and order by model supplies. (after consulting with Head Chef)

·        Responsible for stock parts creation on the university stock control systems.

·        Responsible for stock receiving and issuing.

·        Responsible for stock transfer from store to store.

·        Ensures that all stock is controlled accordingly in conjunction with the Head Chef and the Admin Assistant.

·        Make necessary menu changes as mandated by the Head Chef.  Control of supplies received and issued to various points of sale.  Conducting monthly inventory counts.  Responsible for putting out the day storage supplies, ensuring that the administrative tasks will contribute to the promotion of the operations.

·        Handle daily write-off of spoiled food.  Assisting with relief services/chef.

3.   Liaison

·      Internal: Liaise with students, Head Chef, other departments, colleagues, and subordinate staff - advisory, consultative and instructive.

·      External: Liaise with the public.

·      Maintaining integrity, accountability, and dedication.

4.   Personnel control

·        Arrange or provide for In-service training and development of personnel.  Motivation and increase of productivity, leave as well as shift arrangements in collaboration with Head Chef.

·        Maintaining discipline and handling conflict.  To make optimal use of available manpower

5.   Personal Development

Personal Development by attending appropriate courses, keeping abreast of new ideas and developments in this field as well as keeping abreast with expansion and development of the university.

Minimum requirements

·        Grade 12 (NQF level 4).

·        A minimum of two (2) years’ stock controlling experience food preparation and cooking experience in a middle to large size kitchen.

·        A certificate in Food Preparation and Cooking.
